Here’s a heart healthy recipe that’s quick and easy. This low-fat, high- taste meal will get you back on track with your New Year’s resolutions. Just remember to always start with fresh Mahi Mahi that you can order for delivery directly to your house.
- 4 (5- to 6-oz.) mahi mahi fillets, 1-inch thick
- 1 teaspoon salt
- Pinch dried oregano
- Pinch dried cumin
- 4 garlic cloves, pressed
- ½ cup lemon juice
- ¼ cup olive oil
- 1 ripe mango, diced
- ½ red onion, minced
- ½ red bell pepper, minced
- 2 jalapeno peppers, seeded, minced
- Juice of 1 lemon
- Several mint leaves, torn into small pieces
Place fillets in shallow glass baking dish. Combine salt, oregano, cumin, garlic, lemon juice, and oil together in a bowl. Pour over fish and turn to coat. Cover; refrigerate and marinate 1 hour, turning once.
For salsa, place all salsa ingredients in bowl and toss with fork to mix. Set aside.
Preheat oven to broil; coat rack of broiler pan with nonstick cooking spray, and heat broiler pan. Remove fillets from marinade; discard marinade. Place fillets on broiler pan and broil 3 to 4 minutes per side, or until fish flakes with a fork.
Serve fillets on individual dishes with mango salsa on the side.
